MLEKO (ok 50ml) PROSCIUTTO (ok 6 plastrków) ŚWIEŻ DYNIA, obrana (100g) SER CHEDDAR (150g) 2 CEBULE DYMKI + SZCZYPIOREK POMIDORKI CHERRY (ok 5-6szt) OLIWA Z OLIWEK/MASŁO do smażenia GAŁKA MUSZKATOŁOWA (pół łyżeczki) SÓL PIEPRZ DIP JOGURTOWY Z KOLENDRĄ: JOGURT GRECKI (ok 200g) MASCARPONE (opcjonalnie) (łyżka) ŚWIEŻA KOLENDRA (garść) SOK Z CYTRYNY (łyżeczka) SÓL PIEPRZ Ser ścieramy na tarce na wiórki. Do miski wbijamy jajka, dodajemy mleko, doprawiamy solą, pieprzem, roztrzepujemy rózgą. Dodajemy 2/3 sera, mieszamy i odstawiamy. Obraną cebulę kroimy w drobną kosteczkę, dynię w cieniutkie plasterki. Na patelni rozgrzewamy oliwę, wrzucamy warzywa, posypujemy gałką muszkatołową i smażymy kilka minut by zmiękły, odpraowały i lekko się zrumieniły. Przekładamy do żaroodpornego naczynia. Na wierzchu układamy poszarpane plasterki prosciutto. Zalewamy masą jajeczną, dodajemy pokrojone w ćwiartki pomidorki i pokrojony szczypiorek. Posypujemy resztą sera i zapiekamy w 200* ok 30 minut (by jajka całkowicie się ścięły a wierzch zrumienił. W miseczce mieszamy jogurt, ser, posiekaną kolendrę, sok z cytryny, doprawiamy solą i pieprzem. Upieczoną frittatę kroimy i przekładamy na talerze, polewamy dipem. Gotowe! |

MILK (about 50ml) PROSCIUTTO (about 6 slices) FRESH PUMPKIN, peeled (100g) CHEDDAR CHEESE (150g) 2 SHALLOT ONIONS + CHIVES CHERRY TOMATOES (about 5-6pcs) OLIVE OIL / BUTTER for frying NUTMEG (half a teaspoon) SALT PEPPER JOGHURT&CORIANDER DIPr: GREEK YOGURT (about 200g) MASCARPONE (optional) (1 tablespoon) FRESH CORIANDER (a handful) LEMON JUICE (teaspoon) SALT PEPPER Grate the cheese. Knock the eggs into a bowl, add the milk, season with salt, pepper, nutmeg fluff using a kitchen rod. Add 2/3 of the cheese, stir and set aside. Peel the onion and cut it into small cubes, butternut squash into thin slices. On a frying pan, warm up the olive oil, add the vegetables, sprinkle with nutmeg and fry for a few minutes for the veggies to soften, evaporate a bit and slightly brown. Translate to an ovenproof dish. Add the torn slices of prosciutto. Pour in the egg mass, add the chopped into quarters tomatoes and sliced chives. Sprinkle with the remaining cheese and bake in 200 *C for approx 30 minutes (for to the eggs to cut completely the top become browned and crispy. In a bowl, mix yogurt, cheese, chopped coriander, lemon juice, season with salt and pepper. Cut the baked frittata into pieces, put on plates, pour over with the dip. Done! |
